Good morning Monday! 🕯Woke up & blended up an almond milk & strawberry smoothie with vanilla vegan protein powder & then got to baking. I’ll admit, while I love to experiment with cooking I am not terribly adventurous or original when it comes to baking. Also, although it’s been years since I have used eggs or dairy for baking, the chemistry of vegan baking is still a very new frontier for me. I am often checking out & comparing recipes but most of the time what I really want when I bake is a simple & quick recipe with familiar ingredients. I have found that simply veganizing “traditional” recipes often works beautifully! This morning while searching for a buttery biscuit recipe, I came across a recipe for ‘Flaky Butter Biscuits’ at the Martha Stewart website. I subbed the butter with vegan butter & the milk with almond milk (will try it with oat milk another day) & voila! Delicious results!!
