Cashew Veggie Stir Fry & Peanut Sauce

I absolutely love cooking for the holidays & especially creating gorgeous plant based spreads with familiar flavors from the festive season. But this Thanksgiving I was in the mood to create something a bit different from the traditional spread – veggie cashew stir fry, jasmine rice & a delicious peanut sauce!

Serves 4-6 people

Cashew Veggie stir fry 

For the cashew veggie stir fry I chopped the following ingredients & placed in wok with a bit of oil on medium heat, stirring often

~3 cups brocoli crowns

2 red peppers

3 medium sized onions

1 1/2 cup cashews

2 cups cashews

Peanut Sauce

For the peanut sauce placed the following ingredients in a pot on medium heat & stirred.  As the sauce began to blend well & thicken up I put it on low heat as I tended to the stir fry.

1.2 cup Tamari

8 tbsp peanut butter

3/4 cup water

2 tbsp sugar

1 tbsp ginger

6 minced garlic cloves

The result was a delicious savory satay-like sauce, perfect for dipping spoonfuls of cashew veggie stir fry & veggie rice into!
