Nice and easy Friday lunch. Basmati rice with garlic and a bit of vegan butter, diced tomatoes and “tofu coins”. I love making these “tofu coins”. I take a block of tofu and use a little shot glass or other kitchen item to make the “coins” and then soak them in a choice of herbs and oil for a few hours. I often like to use Seitenbacher Vegetable Broth as well for the tofu seasoning. After it’s marinated for a bit I lightly fry them up and then serve it up with some rice and fresh veggies- today’s was tomato. Nice, light & filling lunch!
