My husband made this yesterday morning and I was so fixated on eating it that I didn’t even snap a photo. It was delicious (and beautifully plated) so I asked for a re-do and he happily obliged. As I ate it he recounted for me when he first tasted an avocado (on a visit to California in his youth) and I do believe I also heard him wondering aloud how he could approach making a vegan tamale!
This was Sweet Earth brand’s ‘Big Sur Breakfast Burrito’ served with shredded lettuce, sliced avocado, Follow Your Heart Vegan Gourmet Sour Cream, Cilantro & Pico de Gallo.
I’ve always been a bit of an on-the-go eater but I really began to appreciate hearty easy to make ‘snack meals’ like this after having my son. I could pop one in the oven and just take out and even wrap in foil and take on the road if needed. But I do love this presentation and sitting down for a calm, full breakfast with my husband while we chat and watch our son at play.
