Marinated Tempeh, Basmati Rice, Greens & Carrot Purée

Last night I prepared the Tempeh to marinate overnight for the Marinated Balsamic, Maple and Garlic Tempeh recipe from the Oh She Glows Cookbook. My sweet stepdaughter gifted me this cookbook and this is the first recipe I made from it!

Today I baked the Tempeh and served over Basmati Rice and Romaine Lettuce in Lemon Juice and Olive Oil

I also added a Carrot Purée to the dish before photographing and then settling into eat with my husband!  There are few occasions when my husband has actually enjoyed Tempeh and this was one of them!
