Tofu, Tomatoes & Carrots with Tomato Coconut Soup

Some of my favorite ingredients & a relatively easy dish to whip up with all sorts of variations.

For the tomato coconut soup I used one can of coconut milk & blended with 3 peeled tomatoes & a bit of salt & pepper.

I have started cubing & then baking my tofu before preparing.  This dries out the tofu just enough for a good texture to then either season & serve or lightly fry up or sautée. For this dish I tossed the tofu cubes in some Braggs Liquid Aminos & lightly stir fried before plating with some jasmine rice, tomates & sauteéd carrots. Simply delicious!
