I tagged this post #annikinthekitchen but this delicious snack is actually my husband’s creation. When I went vegan in early Autumn 2014 we were living in Manoa Valley on Oahu. My husband wasn’t very surprised by my transition to veganism but naturally it took an adjustment period. Within weeks he was learning to veganize some of my favorites as well as simply improving upon things that I was already acquainted with eating (that happened to be vegan) like the delicious musubi – tofu style.
Despite the fact that I eat tofu much more frequently than my husband, he has by far the better hand at preparing it, particularly in his preparation for the Tofu Musubi, which he wraps with rice sprinkled with furikake (only seaweed, sesame seeds, salt and sugar) in nori. I love to eat these in the morning as well as have on hand to snack on through the day!
